Skillet Gravy

My recipe for biscuits and gravy is a little more work than just opening a can of biscuits and pour prepared sauce over some, but not much. It is one of the best biscuits and gravy recipes around! Does not take much time to prepare, and well worth the few extra minutes it takes to bake pumpkin cookies from scratch. Can be to mix the sauce with the easy, while baking cookies, to save time.

3 cups unbleached flour
2 teaspoons baking powder
1 teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 / 2 teaspoon nutmeg
12 tablespoons butter
2 / 3 cup pumpkin, canned solid
1 container (6 oz.) Vanilla yogurt
1 / 4 cup brown sugar
1 teaspoon vanilla extract double strength

(Note: the best I can recommend baking ingredients – cinnamon, nutmeg and vanilla extract exceptional – are available at the company Rawleigh by mail.)
Preheat oven to 425 degrees. Grease a cookie sheet and set aside. In a large bowl, combine the flour, baking powder, salt, baking soda, cinnamon and nutmeg. Add butter and mix the flour with your fingers until mixture is well combined and look mealy. Add the pumpkin and yogurt, and turn the dough on a well floured countertop. Knead dough a few times, just to combine and to avoid sticky. Roll out to 1 / 2 inch thick, use a cookie cutter 2-inch to cut 15 cookies (re-roll, if necessary). Place biscuits on cookie sheet in three rows, touching each other. Brush tops of biscuits vanilla, and sprinkle with brown sugar. Bake 15-18 minutes, until top golden and set. Performance – 15 cookies.

1 pound pork sausage
1 small onion, minced
2 / 3 cup Rawleigh Brown Gravy Mix
1 cup skim milk
3 cups boiling water

Brown sausage in a large skillet and drain excess fat. Add onion and saute until onion is translucent. Prepare sauce mix according to package directions, substituting skim milk for cold water. Pour the prepared sauce for sausages and cook until thickened and liquid is slightly lower. Place 2-3 cookies on a plate and pour the sauce over sausage. Serves 4-6.
